Usage
Penja red pepper is a rare pepper. It is picked by the women of the Cameroon valley, who then sort the peel.
Penja’s volcanic soil gives this pepper a scent reminiscent of camphor and incense.
It is one of the least common peppers, as most producers harvest this pepper before it is fully ripe, resulting in black pepper. When this red seasoning is dried, it takes on an intense pink color that resembles coffee beans. It’s the best pepper for pork, duck and poultry.
